Mix 2 minutes slow speed and 8 minutes fast speed using spiral

Dough temperature: 28°C

Intermediate proof: 5 minutes

Final proof: 50 - 60 minutes

Proof temperature: 30°C

Relative humidity: 80% RH

Bake temperature: 240°C - 250°C (490°F - 510°F)

Bake time: 9 - 10 minutes

Bake without steam
