A 100% mix for the production of a multi-grain bread with added health benefits. Prokorn is high in calcium, fibre and provides a source of iron. It contains a delicious mix of linseeds, sunflower, maize and bran. Prokorn is suitable for the production of loaves, subs and rolls.

Method

 

> Mix ingredients for 4 minutes on slow speed then 6 minutes on fast speed. Mix into a well developed dough

> Dough temperature: 26°C

> Scale at: 440 grms

> Rest for: 20 minutes

> Mould and shape, decorate as desired

> Prove time: 60 minutes

> Make a cut in the dough 3 times lengthwise

> Proof temperature: 30°C

> Relative humidity: 80%

> Bake time: 35 minutes

> Bake temperature: 240°C

> Bake with steam
