A concentrate for the production of scones. Economical in use, this produces a consistent product with a rich buttery flavour.

Method

> Mix ingredients for 1 minute on slow speed then 1 minute on 2nd speed

> Rest dough for 10 minutes

> Pin out and cut into shape

> Rest for a further 30 - 40 minutes

> Glaze

> Bake 9 - 11 minutes (open dampers for 5 minutes, closed for the remaining baking time) 

> Bake temperature: 225°

 

Suggested levels of fruit addition when required:

 

Cherries - 250 grms per kg of Scone Concentrate

Sultanas - 400 grms per kg of Scone Concentrate

 

Bakers tip

NB Rest where possible to avoid shrinkage and improve overall volume
