Method

For coloured macarons decrease the water level with the amount of colour added

 

  1. Mix the water (colour as required) and the Macaron mix for 5 minutes on 2nd speed using a flat beater on a planetary mixer.
  2. Pipe macaron about 3cm in diameter, onto heavy baking sheets lined with silicon paper. (or silpat mats)
  3. Let them skin for at least 90 minutes.
  4. Preheat oven to 140°c- 150˚C (Bake with damper open).
  5. Bake until set but not brown. (approx 20 minutes)
  6. Let cool completely before filling, decorating.
