Carrot Cake
Ingredients Kg Grams
Multi Cake mix 1 000
Butter/Cake margarine 150
Vegetable oil 300
Whole egg 530
Soft brown sugar 530
Ground cinnamon 20
Mixed spice 6
Grated carrot 570
Sultanas 380
Chopped walnuts 190

Method:

  • Mix all ingredients (except for the carrot, sultanas and walnuts) for 1 minute slow and 5 minutes medium speed
  • Add inclusions and mix for a further 1 minute on slow
  • Deposit into tins
  • Bake at 170C for 45-50 minutes (approx.)
  • Tip from tin and cool on a wire rack

 

Baker's Tip:

 Sandwich and coat with cream cheese frosting, dress sides with chopped walnuts and top with piped or marzipan carrots.
