Cherry and Walnut Cake

Preparation

Method:

  • Mix all ingredients (except walnuts and cherries) in a planetary mixer for 1 minute slow and 3 minutes medium speed using flat beater.
  • Mix in walnuts and cherries on slow speed.
  • Deposit 400g in a loaf cake tin (with greaseproof case).
  • Insert a plastic scraper that has been greased into the top of the batter to make a line in the centre and then remove (this will ensure a central burst whilst the cake is baking).
  • Dot with extra cherries per cake if desired and sprinkle with granulated sugar.
  • Bake at 180°c for 50-60 minutes (approx)
  • Cool slightly and tip from tin, cool on a wire rack.
