Method:

  • Mix all ingredients in a planetary mixer for 1 minute slow and 3 minutes medium speed using flat beater.
  • Deposit 350g in a loaf tin.
  • Insert a plastic scraper that has been greased into the top of the batter to make a line in the centre and then remove (this will ensure a central burst whilst the cake is baking).
  • Bake at 180°c for 40 minutes (approx)
  • Cool in the sheet and decorate and slice as required.

 

Tips:

  • Several options are available for this recipe:
  • Chocolate chips or fruit added at up to 20% on mix weight.
  • Decorate with demerera sugar or sugar pearls for a crunchy top.
