Neapolitan Cake

Neapolitan Cake
Ingredients Kg Grams
Multi Cake Mix 2 100
Margarine/ butter 1 200
Whole egg 1 200
Water 160

 

Method:

  • Mix the margarine or butter, and water, in a planetary mixer for 5minutes fast speed using a whisk attachment.
  • Scrape down.
  • Add other ingredients and mix for 3 more minutes on medium speed.
  • Separate batter into 3x  1500g batches
  • Colour one batch pink, one yellow and leave one plain.
  • Scale 3x 500g cakes out of each batch, into greased and lined loaf tins.
  • Bake at 180°c for 50 minutes (approx)
  • Tip from tins and cool.
  • Slice each cake into 3 horizontal lengths
  • Assemble into multicolour cakes using the butter cream recipe below. 

 

 

Baker's Tips:

  • Butter cream
  • 400g soft butter
  • 560g icing sugar
  • Vanilla to taste 
  • Mix all together for 5 minutes fast speed on a mixer with beater attachment until light and fluffy.
