Mixed Seed Honey Cake

Yield: 6 loaf cakes @ 400g

Preparation

 

Method:

  • Mix all ingredients (except honey) in a planetary mixer for 1 minute slow and 3 minutes medium speed using flat beater.
  • Deposit 400g in a loaf cake tin (with greaseproof case).
  • Optional: fold in a small quantity of honey
  • Cut the length of each cake with a greased scraper for a central rise.
  • Bake at 180°c for 40 minutes (approx)
  • Cool slightly and tip from tin, cool on a wire rack.
  • Brush, or inject, honey into and on the cake to taste.
