Preparation
Method:
- Mix ingredients for 2½ minutes on slow speed using spiral mixer, then mix for 7½ minutes on fast speed.
- Dough temperature = 27°C
- Sheet out dough to a thickness of 5mm
- Divide into desired shape, using Christmas cutters
- Prove for +/- 35 minutes, temperature 30°C, relative humidity 70%
- Fry at 180°C
- Fry time dependent on size of dough piece, 1-2 minutes each side.
- When cool, finish with Mont Blanc (or icing sugar), white or coloured fondant and decorate.
