Preparation

Method:

  • Mix ingredients for 2½ minutes on slow speed using spiral mixer, then mix for 7½ minutes on fast speed.
  • Dough temperature = 27°C
  • Sheet out dough to a thickness of 5mm
  • Divide into desired shape, using Christmas cutters
  • Prove for +/- 35 minutes, temperature 30°C, relative humidity 70%
  • Fry at 180°C
  • Fry time dependent on size of dough piece, 1-2 minutes each side.
  • When cool, finish with Mont Blanc (or icing sugar), white or coloured fondant and decorate.
